Spiced Bread {the Icelandic way}

I was recently talking to someone who is planning a trip to Iceland in June and all the memories came flooding back from our own trip as we discussed what he should make sure he sees when he is there. On our trip last March, we stayed at a guesthouse in a tiny village in the northern part of Iceland and were treated to the most amazing spiced bread. The woman who ran the guesthouse made the bread each day and had little recipe cards to take home.

I finally, one year later, made the bread and it’s as good as I remember. It’s hearty, slightly sweet, full of warm spices, and is so so easy.

note: the measurements below are the converted amounts from the metric recipe on the card.

INGREDIENTS:

3 cups oatmeal
3 cups wheat flour
1 3/4 cups sugar
2 tablespoons cacao or baking cocoa
4 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon ginger (I used fresh)
1 teaspoon clove
2 1/8 cups plain yogurt
1 1/4 cups milk

DIRECTIONS:

1. Mix together all wet ingredients in a bowl.
2. Add all dry ingredients to the bowl and mix well.
3. Grease two bread pans, and bake at 350 degrees for 50 – 60 minutes.
4. Serve warm with butter or jam.
